Clafoutis is a classic French custard-based dessert.
So smooth and delicious and so easy to make.
1 cup flour, sifted
1 packet Frozen Berry Limeade Slush Mix (Retired)
¼ tsp. salt
3 large eggs
2 cups table cream (18% M.F.)
1/4 cup Cointreau (orange liqueur)
2 cup fresh berries (raspberries & blueberries)
1 Tbsp. unsalted butter, cut into bits
Instructions
Preheat oven to 350°F. Butter and flour a 10" spring form pan. Mix together flour, Frozen Berry Limeade Slush Mix (Retired) and salt. In a separate bowl, mix eggs, cream, and Cointreau. Stir cream mixture into the dry ingredients. Mix until lumps are gone, and mixture is combined. Pour batter into the prepared pan. Scatter berries over top, then dot with butter bits. Bake for 40-50 minutes until Clafoutis is barely set and still slightly jiggly in the centre. The remaining heat in the pan is enough to help it finish setting. Serve warm or cooled with a berry sauce of choice.
